It’s that time of the week again. I’m pretty chuffed that almost four months into the year (HOW?!) and I’m still meal planning. I’ve never stuck to it for more than a couple of weeks at a time, but I’ve now realised just how helpful it can be. We mostly stuck to it this week, except for Friday because I had forgotten to take the chicken out of the freezer to defrost – duh! Luckily, I had some cottage pies in the freezer that just needed to be defrosted and cooked, so we had those instead. Here is this week’s plan:
Monday: Leon Warm Chicken Kale Caesar Salad for adults, chicken nuggets, chips and beans for the kids
Tuesday: Spiced pork with creamy lentils and nigella chapatis for adults. Homemade soup and veg for kids.
Wednesday: Beef roast dinner
Thursday: Sweet and sour pork with egg noodles
Friday: Pizza, chips and garlic bread
Saturday: Fajitas or enchiladas (parents are coming to stay if the weather holds out!)
Sunday: Butter chicken and rice
